Yummy Spice Biscuits

Baking these very moor-ish biscuits fills the house with the scents of vanilla, cardamom and cinnamon…….mmmmm – so GOOD!!
I like to serve them with a “nice cup of tea” for a cozy autumn treat

125g softened butter
1 cup castor sugar
1 egg
1 ½ – 2 Cups of plain flour
2 tsp vanilla essence
1 cup currents
½ cup mixed peel
2 tsp cardamom
Cinnamon sugar to sprinkle
  1. Preheat oven to 160° fan forced
  2. Spray 2 baking sheets liberally with cooking spray
  3. Cream butter and sugar
  4. Add egg and beat till light and fluffy
  5. Add fruit and spices and mix well
  6. Add flour – you want the dough fairly stiff but still a little sticky
  7. Roll spoonful’s into balls and squash onto trays
  8. Brush with a little water (not to much though) and sprinkle with cinnamon sugar
  9. Bake for about 10 minutes – or until very lightly golden
  10. Cool on trays for 5 minutes before transferring to a wire rack to finish cooling
