Kat’s Chocolate Crunch Biscuits

These are a huge hit in my house – they are a nice light textured chocolate biscuit with a lovely “crunch” courtesy of the little chunks of dark chocolate….. Don’t expect them to last in the tin very long!

175g softened butter
½ cup of white sugar
1 tsp vanilla extract
2 TBSP cocoa
1 cup Self Raising Flour
¾ Cup small dark chocolate chips
  1. Preheat oven to 160° fan forced
  2.  Spray 2 baking sheets with non stick spray and set aside
  3. Cream butter, vanilla and sugar till light and fluffy
  4. Add egg and beat till well combined
  5. Add flour, cocoa and chocolate chips and mix till well combined – it should be a fairly stiff dough.
  6. Roll heaped tablespoon-fulls into balls and sqush onto trays – leaving about 2-3cm between each biscuit.
  7. Bake for about 7-10 minutes – they don’t need long
  8. Allow to cool on trays for 5 minutes before transferring to a wire rack to finish cooling.

Makes about 24 biscuits
