This was my great-great-granny’s recipe. It would have taken a lot of elbow grease without the mixer!
125g softened butter
1 cup of sugar
3 eggs
1 1/2 Cups Self Raising Flour
1/4 Cup of Milk
1 teaspoon vanilla essence
1 cup of sugar

- Preheat oven to 160° fan forced
- Grease and line a 9″ square or round tin
- Place all ingredients in a mixer, start slow to incorporate flour, then increase speed and mix until pale and fluffy
- Pour into tin and bake for approximately 550 minutes or until a skewer inserted into the middle comes out clean
- Turn onto a wire rack and allow to cool
- Ice as desired
